Casserole Potatoes

You might want to substitute the following in one of the Oven Meals:

Peel and coarsely dice potatoes. Place in well greased casserole and season with salt and pepper. Melt butter or a mixture of butter and other shortening (about 1/2 Tbsp of fat to each medium sized potato); pour over potatoes. Cover casserole and bake in preheated oven.

Parsley Rice

Bring to boil in a covered saucepan:

  • 1 cup rice
  • 2 1/4 cups water
  • 1 tsp salt

Stir with a fork; cook over low heat till almost tender, 10 minutes. Drain.

Mix with the following ingredients which had previously been baked together:

  • 1/4 cup butter
  • 1 cup chopped parsley
  • 1 finely chopped onion
  • 1/2 cup slivered almonds
  • 1/4 tsp garlic salt
  • 1 egg, beaten
  • 1 cup milk

Turn mixture into a 5 or 6 cup baking dish. Bake in moderate oven, 375° for 30 minutes; cover and bake 15 minutes longer.

Arkansas Caviar

  • 1 (8 oz) Italian dressing (fat free)
  • 2 (15 oz) cans black eyed peas (drain)
  • 1 can black beans
  • 1 can shoe peg corn (drain)
  • 1 can Rotel tomatoes (drain)
  • 1 (16 oz) jar salsa
  • 2 or 3 chopped green onions
  • 1 bell pepper (chopped)
  • 2 tomatoes (chopped)

Mix all ingredients together and chill. Best if chilled overnight.

Roasted Potatoes

  • 8 to 10 quartered potatoes
  • 1 (8 oz) cup sour cream
  • salt
  • pepper
  • 1 stick margarine

Peel, wash and quarter potatoes. Place in two quart casserole dish, with 1/2 cup water. Cover with lid; microwave on High for 9 minutes. Gently stir potatoes. Microwave for 9 more minutes. Drain water. Melt butter over potatoes. Salt and pepper.

Sour Cream may be mixed over the potatoes with the butter or placed on the table for each individual’s preference.

Macaroni and Cheese

  • 2 cups cooked elbow macaroni
  • 2 Tbsp butter or margarine
  • 2 Tbsp all-purpose flour
  • 1/4 tsp dry mustard
  • dash of pepper
  • 1 cup milk
  • 1 cup and 4 oz sharp shredded Cheddar cheese

Prepare macaroni and set aside. Melt butter in 2 quart casserole in microwave oven, 1 minute at High. Add flour, salt and pepper; mix well. Add milk gradually, stirring constantly. Cook uncovered 6 minutes at High. Stir every 2 minutes. Add cheese to sauce and stir. Cook uncovered in microwave 1 minute at High. Add macaroni to cheese and sauce mix. Cook uncovered in microwave 4 minutes, at High. Stir half through cooking.

Sliced Baked Potatoes

  • 4 medium potatoes
  • 1 tsp salt
  • 2 to 3 Tbsp butter, melted
  • 2 to 3 Tbsp chopped parsley or herbs of choice
  • 4 Tbsp grated Cheddar cheese
  • 1 1/2 Tbsp Parmesan cheese

Peel potatoes; cut in thin slices but not all way through. Place potatoes in microwave dish or pan. Sprinkle with butter and herbs. Microwave at High power for 10 minutes. Rearrange potatoes after 5 minutes. Let cool for 5 minutes. Sprinkle grated cheese and Parmesan cheese. Microwave for 4 to 6  minutes on High until cheese is melted and potatoes are soft. Sprinkle with salt.

Serve as a side dish or main.

Serves 4

Potato Salad

Serves 100 People

  • 40 lb Irish potatoes, cubed
  • 3 cups pickle relish
  • 3 dozen boiled eggs, diced
  • 2 yellow onions, chopped
  • 1 red onion, chopped
  • 1 tsp mustard
  • 2 pt mayonnaise
  • 1 1/2 Tbsp butter or grease
  • 1 tsp red pepper
  • salt
  • pepper
  • 1 (8 oz) jar pimentos
  • paprika for color

Boil cubed potatoes until tender and drain; add butter. Add relish, eggs, pimentos, onions, mustard and mayonnaise. Mix well. Add red pepper, salt and black pepper to taste. Sprinkle top with paprika for color.

This will serve 100 people. (You may always figure 2 1/2 servings for each pound of potatoes)>

Glazed Sweet Potatoes

Serves 50 People

  • 14 1/2 pound sliced, cooked sweet potatoes
  • 1 pound 5 oz sugar, white or brown
  • 1  1/3 Tbsp cornstarch
  • 1 1/3 quart water
  • 2/3 cup butter
  • 1 1/3 Tbsp salt

Combine sugar, salt and cornstarch. Stir in water and cook 15 minutes. Add butter. Pour over sweet potatoes in a  flat pan, so each piece is covered. Bake at 350° for 1 1/2 hours.

Mashed Potatoes

Serves 100 People

  • 25 lb pared potatoes
  • 1/4 cup salt
  • 1 1/2 quart hot milk
  • 2 cups melted butter
  • black pepper to taste

Peel and pare potatoes. Cook potatoes until done. Add all ingredients and mix well. Using 1/2 cup servings, this will serve 100.
