Pumpkin Chip Muffins

Cooking Time:  16-20 min

Ingredients
  • 4 eggs
  • 2 cups sugar
  • 1 can (16 ounces) pumpkin
  • 1-1/2 cups vegetable oil
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 2 cups (12 ounces) semisweet chocolate chips
Instructions

In a large mixing bowl, beat eggs, sugar, pumpkin and oil until smooth.  Combine flour, baking soda, baking powder, cinnamon and salt; add to pumpkin mixture and mix well.  Fold in chocolate chips.

Fill greased or paper-lined muffin cups three-fourths full.

Bake at 400º for 16-20 minutes or until muffins test done.  Cool in pan 10 minutes before removing to a wire rack.

Yield:  about 24 standard-sized muffins.

Berry Cream Muffins

Cooking Time:  20 – 25 Minutes

Ingredients
  • 4 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 cups fresh or frozen raspberries or blueberries
  • 4 eggs, lightly beaten
  • 2 cups (16 ounces) sour cream
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
Instructions

In a large mixing bowl, combine flour, sugar, baking powder, baking soda and salt; add berries and toss gently.  Combine eggs, sour cream, oil and vanilla; mix well.  Stir into dry ingredients just until moistened.

Fill greased or paper-lined muffin cups two-thirds full.

Bake at 400º for 20-25 minutes or until muffins test done.

Yield:  about 24 standard-sized muffins.
