Coconut Pie

Mix well:

  • 1 cup sugar
  • 4 heaping Tbsp cornstarch

Add a little from 2 cups milk and 3 egg YOLKS, beating well. Then add rest of milk.

Cook in double boiler over boiling water till good an thick.

Add:

  • 1 can coconut or use fresh or frozen
  • lump butter
  • pinch salt
  • vanilla

Mix well and pour into baked large pie shell and top with Meringue.

Bake at 400° till golden brown.
