Soften 1 1/2 Tbsp unflavored gelatin in 1/2 cup cold water.
In top of double boiler, combine:
- 3 egg YOLKS
- 1 1/4 cups skim milk
- 2 Tbsp Sucaryl solution
- 1/4 tsp salt
- 2 sqs. (2 oz) unsweetened chocolate, cut into pieces
Blend well. Place over hot water and cook, stirring constantly, till smooth and thickened. Remove from heat.
- 1/2 tsp mint extract
- softened gelatin
Stir to dissolve gelatin. Chill till mixture begins to mound from spoon.
Beat 3 egg whites till stiff peaks form; Fold into gelatin mixture.
- 1/4 cup nonfat dry milk
- 1/4 cup ice water
Beat on high speed of mixer till soft peaks form. Fold into chocolate mixture. Chill till mixture begins to set. Spoon into baked 9″ pie shell and chill till set.
6 Serving, each 239 calories; 11 grams protein; 14 grams fat; 20 grams carbohydrate. With sugar, 383 calories.
