Shrimp Creole

In 1/4 cup bacon fat, shortening or olive oil, brown:

  • 1/2 cup chopped green pepper
  • 1/4 cup chopped onion

Stir as they brown. Add in:

  • 2 cups (1 tall can) tomatoes, chopped
  • 1/2 cup sliced mushrooms (1 4oz can)
  • 1 can Progresso Caponata (4 1/2 oz), optional
  • 2 tsp salt
  • dash black pepper

Reduce heat and cook for 15 minutes. Add:

  • 2 cups uncooked shrimp or more
  • 1/4 cup water
  • 4-5 drops of Tabasco

Cover and cook an additional 15 minutes.

Serve hot over cooked rice.
