Pilaf of Seafood

Cook 1 medium chopped onion in 2 Tbsp oil till browned. Stir in 2 cups cooked rice.

Combine in saucepan:

  • 2 cups tomatoes (1 no. can)
  • 3 stalks diced celery
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • 1/2 bay leaf
  • 1/4 cup grated cheese

Heat till cheese is melted. Fold in rice, mixed with onion, etc. 1 cup cooked Shrimp or Crabmeat.

Pour into a greased casserole. Cover and bake in a moderate slow oven, 325°, for about 25 minutes.

Serves 6
