Spanish Meat Loaf

  • 3/4 lb ground pork
  • 1 lb ground hamburger meat
  • 1 chopped large onion
  • 1/2 minced clove garlic
  • 1 chopped green chili pepper
  • 1/4 tsp black pepper
  • 1 tsp salt

Mix well and add:

  • 1 cup bread crumbs
  • 1 egg
  • 1/4 cup sweet milk

Mix in well. Cut ends off 3 boiled eggs; place cut ends together to make center of loaf. Mold meat mixture around eggs. Roll in 1/4 lb crackers, crushed to make crumbs. Bake 12 minutes at 425°, then lower heat to 250°. Cover and bake 1 1/2 hours or till thoroughly done. May add a pinch of mint.
