Mexican Corn Bread

  • 1 cup corn meal
  • 1 cup buttermilk
  • 2 eggs
  • 1/2 cup bacon drippings
  • 1/2 tsp salt
  • 3/4 tsp soda
  • 1 medium chopped onion
  • 1 1/2 mild jalapeno peppers
  • 1/2 can cream style corn

Mix all ingredients. Pour half the batter in a large iron skillet which has been greased and heated. Sprinkle 1/2 lb grated cheese over it, then add rest of the batter and bake in a 400° oven. Cook the cornbread till golden brown.
