Meat Loaf

Mrs. Cleo T. Aulds

  • 1 lb ground meat
  • 3 beaten eggs
  • 3/4 tsp salt
  • 1/2 chopped bell pepper
  • 1 dices onion
  • 1 cup tomato juice
  • 1 cup cooked rice
  • 1 cup cracker crumbs, finely crushed

Mix above ingredients; place a strip of bacon across the top of the loaf.

Bake at 350° (slow oven) for 45 minutes or 50.

Serve with:

TOMATO SAUCE:

  • 2 Tbsp flour
  • 2 Tbsp butter
  • salt and pepper to taste.
  • 1 cup tomato juice

Cook in double boiler over low heat till thick enough to serve
