Mexican Corn Bread

  • 1 1/2 cups corn meal
  • 3 Tbsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 cup sour cream
  • 2/3 cup salad oil
  • 1 cup cream style corn
  • 2 Jalapeno peppers
  • 2 Tbsp bell peppers

Mix together. Pour 1/2 the mixture in hot greased skillet. Sprinkle 1/2 cup grated sharp cheese. Then add remaining mixture and top with another 1/2 cup grated sharp cheese (using 1 cup in all).

Bake at 350° for 35 – 40 minutes.

For variety, add ground beef to the mixture and blend the cheese in through the entire mixture, then bake.
