Beef Liver and Onions

  • 4 or 5 slices calf liver. Pour boiling water over and let drain.
  • 5 strips bacon, fried and set aside.

Dip liver into seasoned flour and fry in bacon grease. Place in casserole – half the liver and over it, slice 1 large onion. Then add remaining liver and another sliced large onion. Add salt and pepper.

Pour 1/2 cup boiling water over this and crumble the crisp bacon on top.

Cook in 350° oven for 45 minutes.
