Chicken Loaf

Mix together:

  • 2 cups fresh bread crumbs
  • 2 cups cooked rice
  • 4 lb chicken, cooked & diced
  • 1 tsp salt
  • 1 small can pimento
  • little broth
  • Last add 4 eggs, well beaten

Bake 1 hour in pan or ring mold.

Serve with:

Mushroom Sauce

Stir together well

  • 1/4 cup butter
  • 1/4 cup flour

Add:

  • 1/2 tsp chopped parsley
  • 1/2 can mushrooms

Cook gently for 5 minutes and then add:

  • 1/4 cup cream
  • 1 tsp lemon juice
  • salt
  • paprika
  • 1 pint chicken broth

Place over hot water till ready to serve.
