Baked Fryers with Mushrooms

  • 2 large fryers, cut in quarters and rubbed with mixture of: salt, red and black pepper. Place in roasting pan and cover with:
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 cup chopped green pepper
  • 1 clove garlic, minced

Cut 1 stick oleo or butter over chicken and add 1 cup olive oil.

Bake covered in a 375 – 400 degree oven for 1 hour. Uncover and add:

  • 1 medium can mushrooms
  • 1 cup cooking Sherry

Continue baking uncovered for 15 minutes or as brown as desired.
