Oven Baked Chicken & Biscuits

Heat oven to 425°, hot.

In paper bag, mix:

  • 1 cup flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 tsp paprika

Place 1/2 cup shortening (half butter) in 13 x 9″ oblong pan & set in oven to melt.

Shake 3 or 4 pieces of chicken at a time in bag to coat thoroughly. Place chicken skin-side down, in single layer in hot shortening and bake 45 minutes, then turn.

Meanwhile, make dough for biscuits; roll dough 1/4″ thick, cut into biscuits.

Push chicken to one end in pan; place biscuits in a single layer on other end. Using 1 #2 1/2 can cling peach halves, place 1 whole clove in each.

Place peach halves on top of chicken. Bake another 15 minutes or till biscuits are lightly browned.

To make GRAVY: Remove chicken, peaches & biscuits to serving platter. Add 2 Tbsp flour (save from the chicken dredging) to drippings in pan; bring to boil. Add about 1 1/2 cups hot milk. Boil 1 minutes.
