Chicken Sauce Pecau

Cut up 3 fryers. Season with:

  • Salt
  • Black Pepper
  • Red Pepper

Fry the fryers UNfloured in a little grease in skillet. Drain meat & bone chickens. Put meat into skillet. Chicken meat, & deer or stew meat.


  • 3 large chopped bell peppers
  • 2 large chopped onions
  • 2 “limbs” chopped Celery
  • Garlic, optional

Saute till limp. Cover with water. Then Add:

  • 1 can tomato sauce
  • Fresh or canned Parsley
  • 1 bunch chopped green onion tips
  • 2 lbs rope sausage, cut in pieces

The longer it cooks, the better the flavor. Serve over cooked rice.
