Chicken & Dumplings

Mrs. Louise Cobb

  • 3 Tbsp fat broth that you have boiled from a hen
  • 3 Tbsp flour into hot broth on top of stove

Cook till smooth, but not brown, just blended. Add this to 5 cups of chicken broth.

Dumplings:

  • 2 cups sifted flour
  • 2 tsp salt
  • 1 tsp baking powder
  • 2 Tbsp shortening

Work up together and add 3/4 cup water. Roll out on floured board till real thin. Cut in squares & into the broth mixture.

Add chicken that has been taken from the bone (or may leave it on).

Cook for 15 minutes. Cover and let set for about 30 minutes before serving.
