Fresh Fruit Cobbler

Mix in saucepan:

  • 2/3 – 1 cup sugar
  • 1 Tbsp cornstarch

Gradually stir in 1 cup boiling water; bring to a boil and boil for 1 minute stirring.


  • 3 cups fresh fruit***
  • lump of butter
  • cinnamon, optional

Pour into baking dish. Making the following DOUGH, drop by spoonful onto fruit, then bake at 400° for 30 minutes.

*** Can use #2 can canned fruit, 2 1/2 cups; for Blackberry, use 3 cups berries to 3/4 cup sugar; for Peach and Apricot, use 1 cup sugar. Delicious using canned cherries.


  • 1 cup flour
  • 1 Tbsp sugar
  • 1 1 /2 tsp baking powder
  • 1/2 tsp salt

Cut in fine – 3 Tbsp shortening. Add 1/2 cup sweet milk, stirring to make soft dough. Drop by spoonfuls onto fruit in baking dish.

This is actually a shortcake dough.
