Chinese Chews

Mrs. Reita Davis

Cream well:

  • 1 stick butter or olea
  • 1 cup sugar

Add:

  • 2 egg YOLKS
  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1/2 tsp salt

Mix together, then pat the dough in a greased and floured 8 1/2 x 8 1/2 x 1″ pan.  Add topping.

TOPPING

  • 2 egg WHITES, beaten just until frothy, not stiff
  • 1 cups brown sugar
  • 1/2 cup chopped nuts.

Spread topping over dough and bake at 350° for 30 – 40 minutes. Cut immediately after baking. These are chewy.

Leave in pan and cover with foil.
