Beat 1 cup sugar into 2 well beaten eggs. Add 1/3 cup melted shortening and blend.

Sift together and add:

  • 3/4 cup flour
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 3 – 4 Tbsp cocoa (may use 2 squares chocolate, but melt it with shortening)

Add:

  • 1/2 cup chopped pecans
  • 1 tsp vanilla

Mix well. Bake in greased and floured 8″ square pan at 350° for 30 minutes. Underbake if you want them chewy. Double recipe, bake in 9 x 12″ pan; tripled recipe, bake in 11 x 16″ pan.

Two very good icing recipes for Fudge squares are:

ICING # 1

  • 2 cups sugar
  • 1/2 cup milk
  • 3 1/2 Tbsp cocoa
  • 1/4 lb oleo or butter

Cook to soft ball stage; remove from heat. Add 1 tsp vanilla and beat well.

ICING #2

  • 2 cups sugar
  • 1/2 cup cream
  • 1 Tbsp corn syrup
  • 3 Tbsp cocoa

Cook to soft ball stage. Remove from heat.

Add:

  • 1 1/2 Tbsp butter
  • 6 marshmallows
  • 1 tsp vanilla
