White Fruit Cake

Mrs. Betty Campbell

Cream:

  • 3 sticks butter
  • 2 1/2 cups sugar

Add:

  • 1/2 pt sour cream
  • 1 oz pure lemon extract

Sift together:

  • 3 cups flour
  • 1 tsp soda

Using some to dredge:

  • 1 cup candied cherries
  • 1 cup candied pineapple
  • 1 cup candied mixed fruit
  • 3 cups pecans – all chopped
  • 2 cans Angel Flake coconut

Mix all together well and bake at 225° in large pan or at 325° in small pan
