Old Time Fruit Cake

Cream:

  • 2 cups butter
  • 1 cup sugar

Add 6 eggs, 1 at a time; beating well.

Sift together:

  • 4 1/2 cups flour (save some for dredging fruit and nuts)
  • 2 tsp baking powder
  • 1/2 – 1 tsp salt
  • 1/2 – 1 tsp spices

Add alternately with

  • 1/2 cup fruit juice (or other liquid)
  • 1/2 cup syrup (optional)

It is best to pour this creamed mixture over –

  • 1 package raisins, white or dark
  • 1 package dates, chopped
  • 1 quart nuts, chopped, or more
  • 1/2 pound almonds
  • 1/2 pint jelly or jam
  • 1/2 pint watermelon preserves
  • 1/2 pint fig preserves
  • Candied pineapple
  • Candied cherries

Mix this well with hands. Pour into prepared pans, lined with greased paper in slow oven till done. DO NOT OVERBAKE.

Note: This has so much sweetened ingredients, does not require much sugar
