Waldorf – Astoria Cake

Cream 1 stick butter. Add 1 1/2 cups sugar, creaming well. Add 2 eggs and beat well.

Make a paste of:

  • 2 tsp cocoa
  • 2 oz red coloring

Add to mixture, beating in.

Add together:

  • 1 cup buttermilk
  • 1 tsp salt

Add half of buttermilk and 2 1/2 cups sifted flour, alternately; then to the rest of the rest of the buttermilk add: 1 tsp soda.

Add to cake mixture; and add:

  • 1 tsp vinegar
  • 1 tsp vanilla

Bake in two 9″ pans at 350°.

FROSTING:

Cook:

  • 3 Tbsp cornstarch
  • 1 cup milk

Stir constantly till thick. Cool.

I do this before starting my cake, and set in refrigerator till ready to frost cake.

Beat in bowl:

  • 2 sticks softened butter or oleo
  • 1 box confectioners’ sugar

Cream well and add in cooled cornstarch and milk mixture, beating in well.

Add:

  • 1 tsp vanilla
  • 1 package fresh or frozen coconut
  • 1/2 cup chopped nuts or more
