Red Velvet Cake

  • 3/4 cups shortening
  • 2 1/2 cups sugar
  • 2 Tbsp cocoa
  • 2 eggs
  • 2 oz red food coloring
  • 1 Tbsp vinegar
  • 1 tsp vanilla
  • 1 1/2 cups buttermilk
  • 1 tsp soda
  • 1 tsp salt
  • 2 1/2 cups flour

Mix and cook in 2 or 3 small pans to stack.

ICING:

  • 1 1/2 sticks oleo
  • 1 1/2 cups sugar
  • 7 1/2 tsp flour
  • 1 cup sweet milk
  • 2 Tbsp flavoring

Cook together till it forms a pudding. Remove from heat and let cool.

Add 1 can coconut and 1 cup pecans.
