Coconut Pound Cake

  • 1 cup butter (2 sticks), creamed
  • 3 cups sugar, creaming well

Add 5 egg YOLKS, 1 at a time, beating after each one.

Dissolve 1/4 tsp soda in 1 tsp hot water. Add to 1 cup buttermilk.

Add alternately with:

  • 3 cups flour
  • 1/2 tsp salt

Beat well and fold in:

  • 5 egg whites, beaten
  • 1 tsp vanilla
  • 1/2 tsp butter flavoring
  • 1 can Angel Flake coconut

Bake in well-greased and floured tube pan at 350° for 30 minutes. Decrease heat to 325° and bake 1 hour.
