Pineapple Upside Down Cake

Cream together:

  • 1/2 cup shortening
  • 1 cup white sugar

Add 2 well beaten eggs

Sift together:

  • 2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt

Mix together with 3/4 cup pineapple juice

Simmer 4 Tbsp butter and 1 cup brown sugar together in pan; arranging pineapple slices on top of sugar and butter. Pour batter over it; bake at 325° for 1 hour.
