Lemon Loaf

  • 1 cup oleo
  • 2 cups sugar, creamed well
  • 4 eggs, 1 at a time, blending well

Sift together:

  • 3 cups flour
  • 1/2 tsp salt
  • 1/2 tsp soda

Add alternately with 1 cup buttermilk.

Fold in:

  • 1 cup chopped nuts
  • grated rind of 1 lemon

Pour into 2 large loaf pans that have been greased or use 3 small loaf pans.  Bake at 350° for about 1 hour.

While baking, combine:

  • Juice of 3 lemons (10 Tbsp)
  • 1 cup sugar

Let stand to allow sugar to dissolve. When Lemon Loaf is done, turn out on waxed paper or foil and spoon the lemon juice and sugar mixture over the loaves.
