Jam Cake

Cream 1 cup butter

Add

  • 1 1/3  cups – Add 1 at a time
  • 4 eggs – beat well after each addition
  • 1 1/3 cups blackberry jam

Sift twice

  • 2  2/3 cups flour
  • 1 1/3 tsp cloves
  • 1 1/3 allspice
  • 1 1/3 cinnamon

To 3/4 cup buttermilk add 1 1/3 tsp soda; adding alternately with flour, a little at a time till all is used.

Bake in moderate oven, 350°, in 3 layers.

ICING:

  • 1 cup milk
  • 1 egg YOLK
  • 3 cups sugar, into which has been stirred in 3 -4 Tbsp flour.

Cook till thick. Add 1 Tbsp butter. After icing cools some, add 1 cup walnuts or 1 cup pecans and 1 tsp walnut flavoring.
