Banana Nut Cake

  • 2 1/2 cups sifted cake flour
  • 1 2/3 cups sugar
  • 1 1/4 tsp baking
  • 1 1/4 tsp baking soda
  • 1 tsp salt

Sift all together and add –

  • 2/3 cup soft shortening
  • 1/3 cup buttermilk
  • 1 1/4 cup mashed ripe bananas (about 3)

Beat 2 minutes, then add –

  • 3 eggs
  • 1/3 cup buttermilk

Beat 2 more minutes and FOLD in –

  • 2/3 cup finely chopped nuts

Bake in two 9″ layer pans at 350° for 35 minutes.

Frost with Seven Minute Icing.

 

Banana Spice Cake

To the above sifted ingredients, add –

  • 1 1/2 tsp cinnamon
  • 3/4 tsp nutmeg
  • 1/2 tsp ground cloves

Add in shortening and 2/3 cup buttermilk, continuing adding bananas, beating, then add 2 eggs – omitting last buttermilk addition and chopped nuts.

Beat 1 more minute and bake in two 9″ pans, (layers).

Frost with Sea-Foam Frosting.
