Mississippi Mud Cake

  • 2 cups sugar
  • 4 eggs
  • 1 cup cocoa
  • 1 cup pecans
  • vanilla
  • 1/4 tsp salt
  • 1 cup margarine
  • 1 1/2 cup plain flour
  • 2 cups small marshmallows

Cream sugar and oleo; add flour, salt, cocoa, eggs, vanilla and nuts. Pour in 9 x 13 inch pan (sprayed with Pam). Bake at 300° for 30 to 35 minutes. Take out of oven, spread marshmallows on cake. Put back in oven until they melt (not for very long). Cool before icing.

Icing:

  • 2 sticks margarine
  • 1 box powdered sugar
  • 1 cup chopped nuts
  • 1/3 cup cocoa
  • 1/2 cup canned milk

Mix sugar, cocoa and margarine (melted). Add milk, vanilla and nuts. Spread on cake.
