Festive Eggnog Cake – Christmas Cake

  • 1 (18 1/2 oz) package yellow cake mix
  • 1 cup Borden dairy fresh or canned eggnog
  • 1/4 cup vegetable oil
  • 3 large eggs
  • 2 Tbsp rum extract
  • 1/4 tsp nutmeg

Preheat oven to 350°. Mix all ingredients. Pour into 3 well-greased 8 inch pans. Bake 20 minutes. Prepare cream cheese frosting.

Frosting:

  • 1 (8 oz) package cream cheese, softened until fluffy
  • 1 pound package powdered sugar, sifted
  • 1 1/2 tsp eggnog

Beat powdered sugar in with cream cheese until fluffy; add eggnog.
