Sliced Baked Potatoes

  • 4 medium potatoes
  • 1 tsp salt
  • 2 to 3 Tbsp butter, melted
  • 2 to 3 Tbsp chopped parsley or herbs of choice
  • 4 Tbsp grated Cheddar cheese
  • 1 1/2 Tbsp Parmesan cheese

Peel potatoes; cut in thin slices but not all way through. Place potatoes in microwave dish or pan. Sprinkle with butter and herbs. Microwave at High power for 10 minutes. Rearrange potatoes after 5 minutes. Let cool for 5 minutes. Sprinkle grated cheese and Parmesan cheese. Microwave for 4 to 6  minutes on High until cheese is melted and potatoes are soft. Sprinkle with salt.

Serve as a side dish or main.
