Potato Salad

Serves 100 People

  • 40 lb Irish potatoes, cubed
  • 3 cups pickle relish
  • 3 dozen boiled eggs, diced
  • 2 yellow onions, chopped
  • 1 red onion, chopped
  • 1 tsp mustard
  • 2 pt mayonnaise
  • 1 1/2 Tbsp butter or grease
  • 1 tsp red pepper
  • salt
  • pepper
  • 1 (8 oz) jar pimentos
  • paprika for color

Boil cubed potatoes until tender and drain; add butter. Add relish, eggs, pimentos, onions, mustard and mayonnaise. Mix well. Add red pepper, salt and black pepper to taste. Sprinkle top with paprika for color.

This will serve 100 people. (You may always figure 2 1/2 servings for each pound of potatoes)>
