Apricot Cheese Delight

  • 1 (No. 202) can apricots, drained and saved
  • 1 (No. 202) can crushed pineapple, drained and saved
  • 2 pkg. orange jello
  • 2 c. hot water
  • 1/2 c. apricot juice
  • 1/2 c. pineapple juice
  • 3/4 c. small marshmallows

Topping:

  • 1 c. sugar
  • 3 Tbsp flour
  • 1 egg
  • 1/2 c. apricot juice
  • 1/2 c. pineapple juice
  • 2 Tbsp oleo
  • 1 c. whipping cream or Dream Whip
  • 3/4 c. grated cheese

Mix jello with hot water and fruit juice; let cool. Add fruit and marshmallows. let jell and add topping.

Topping:

Cook sugar, flour, egg and fruit juice until thick. Add oleo. Let cool before adding whipping cream that has been whipped. Fold it in and spread on jello mixture. Add cheese.
