Spanish Pork Chops

  • 6 pork chops, seasoned with salt and pepper
  • 1 small onion, chopped
  • 3 Tbsp bell pepper, chopped
  • 1 can tomato paste
  • 1 cup long grain rice (not Minute)
  • 1 cup hot water
  • Salt and pepper to taste

Brown pork chops to remove most of grease. Place in shallow casserole dish. Sprinkle onion and bell pepper over chops. Pour remaining ingredients over chops. Cover and bake 1 hour at 350°.
