Spanish Delight

  • 1 to 1 1/2 pound ground beef
  • 1 medium onion, chopped
  • 1/2 medium bell pepper, chopped
  • 2 cloves garlic, chopped
  • 1 can tomato paste
  • 1 cup water
  • 1 (15 oz) can cream style corn
  • 1 (8 oz) package noodles
  • 3 Tbsp chili powder
  • Salt and pepper to taste
  • Grated cheese

In heave skillet, brown ground beef, onions, bell pepper and garlic. Add tomato paste, water, corn, noodles and seasonings. Simmer until noodles are tender. Add more water, if necessary. Turn into casserole and bake at 350° for 30 minutes. Top with cheese the last 10 minutes of baking.

Note: This dish freezes very well.
