Jam Cake

  • 3 eggs
  • 1/2 cup oleo or oil
  • 1 cup sugar
  • 1 3/4 cup flour
  •  1 cup jam (blackberry or strawberry)
  • 1/2 cup buttermilk
  • 1 tsp soda
  • 1 tsp allspice
  • 1 cup nuts
  • 1 tsp vanilla
  • 1/4 tsp salt

Cream sugar, oleo and eggs together. Mix dry ingredients together and alternate with milk and jam. Add nuts. Pour into 3 prepared layers. Bake at 325° for 25 minutes.

Icing:

  • 1 1/2 cup sugar
  • 7 Tbsp Pet milk
  • 3 Tbsp oleo
  • 3 Tbsp shortening
  • 1 tsp Karo syrup
  • 1 tsp vanilla

Bring to a boil and cook for 2 minutes, stirring constantly. Cool and put on cake.
