Pinto Beans with Beef

  • 1 small package dried pinto beans
  • 1 onion, chopped
  • 1 lb ground beef
  • 1 can Ro-Tel  tomatoes
  • 1 can (8 oz) tomato sauce
  • 1/2 cup chopped green pepper
  • 1/2 cup ham chopped
  • 2 slices bacon or salt pork
  • Salt, pepper, chili powder to taste
  • 2 Tbsp butter

Soak beans overnight. Cook beans until almost tender with bacon or salt pork for seasoning. Melt butter and saute onions and peppers. Add ham and ground beef and brown. Add Ro-Tel tomatoes and tomato sauce. Combine beans and meat mixture and seasoning. Cook until soft and serve over rice.
