Fluffy Pineapple Pie

  • 4 Tbsp sugar
  • 3 Tbsp flour
  • dash of salt
  • 2/3 cup pineapple juice
  • 1 (#2) can crushed pineapple
  • 1 egg, well beaten
  • 1 carton whipping cream
  • 2 1/2 cup miniature marshmallows

Mix sugar, flour and salt;  add pineapple juice. Blend well. Cook over low heat until thick. Add a small amount of hot mixture to well beaten eggs. Stir into remaining hot mixture, cook until thick. Add marshmallows. Stir well, until melted. Add well-drained pineapple and chill 1 hour. Fold in 1/2 of whipped cream and pour into baked pastry shell. Top with remaining whip cream. Chill at least 1 hour before serving. Best if longer.
